The importance of iodine.
Iodine is a trace element that is naturally present in many foods. It is an essential component of the thyroid hormones thyroxine (T4) and triiodothyronine (T3). Thyroid hormones are extremely important as they regulate important physiological and biochemical functions, such as protein synthesis and enzymatic activity, and are vitally important and determinant in metabolic activity1,2. They are also necessary for the health of bones and the development of the nervous system1.
Thyroid function is primarily regulated by the thyroid-stimulating hormone (TSH), which is secreted by the pituitary gland. The secretion of TSH increases the absorption of iodine by the thyroid and stimulates the synthesis and release of T3 and T4. Iodine deficiency causes TSH levels to remain high and increases the likelihood of producing goiter, a pathology that enlarges the size of the thyroid and reduces the ability to assimilate iodine, greatly affecting thyroid function and health. In addition, iodine also plays a fundamental role in the immune system2.
Iodine absorption.
Iodine is quickly absorbed in the stomach and duodenum, once in the circulation the thyroid concentrates it in appropriate amounts for the synthesis of thyroid hormones2,3. The body's iodine reserves are 15-20 mg and 80% is in the thyroid4.

Iodine deficiencies.
